$2 Budget Lunches

Budget lunch ideas can often be overlooked. It’s easy to get into a same ole same ole boring food items. There are plenty of great lunch ideas that are NOT boring, they are super low budget and they taste amazing, but most importantly they transport well. 

All these recipes that I’m about to share with you are all tried and true recipes that me and my family loved! 

Move over boring lunches, these lunches are taking the stage!

Tools Needed:

Sliders are so easy to make and are very surprisingly low budget. I like to get the rolls from Aldi, which are usually about $2. You can use any kind of topping that you prefer. I just did pepperoni but the choice is up to you. The only other ingredients you need are cheese and pizza sauce. 

Serving this with some chips is such a great and easy meal. 

You will cook this at 400 degrees for 15 minutes, and BOOM you have lunch ready to go. 

The total I spent for this meal was $7.24 or about $1.44 per person. This made 6 servings.

This is a GO-To when it comes to meal prep and there is a reason for that. It’s super healthy, delicious and it reheats very well. I love to meal prep these for me and my husband, and the  best part of this is that its very hearty and delicious.

I like to cook my chicken on a sheet pan, my broccoli in a steamer or on a sheet pan as well, and the rice in the instant pot.

Club Wraps

Don’t overlook a classic wrap sandwich! You can customize this however you desire but I love just the traditional club wrap. My husband loves the BLT and loves it when I meal prep that for him. Honestly, the options are limitless when it comes to wraps. 

There are tons of different types of tortillas you can use as well. The spinach and herb tortilla is  amazing and is great for wraps. of course, choose one that is to your choosing.

This meal is also very budget friendly as it is only $1.64 per serving.

Tuna Salad Sandwiches on Croissants

Hear me out on this one! I know a lot you are not tuna fans, but if  you are even the slightest, you’ll like this one. 

The sandwich is on a croissant and that just changes everything! Even adding some lettuce and tomato to it, will enhance your tuna by far! Even my kids became a fan of  this one.

These make such a great appetizer, snack and even lunch item. These, I believe would be amazing to bring to a party. 

These have a creamy texture filled with pizza sauce and cream cheese layered with pepperonis and mozzarella cheese.

We had these for lunch and paired it with some veggies and chips.

These are very budget friendly,  they cost $6.58 or $1.09 per serving.
